Bacon Chicken Thighs

Instructions

  1. Season the chicken, then fry in 2 T bacon fat until both sides are golden. Remove from skillet and hold in 160-degree oven.
  2. Saute the onion in the bacon and chicken drippings until translucent, then add the mushrooms and continue cooking until done.
  3. Add the garlic, broth, cream, cheese, thyme and lemon juice, bring to a simmer. Return the chicken to the skillet and simmer until the chicken is cooked.
  4. Plate and sauce the chicken, then garnish with the bacon and serve hot.
